Happy Easter!

I went to my sister's house for Easter today, which meant I got to see Doki's sister, Toki. I gave Toki to my sister when she was a puppy because her and Doki started to fight as they got older. Toki is doing so well at my sister's and is enjoying being part of their family, which has two boys. Toki and Doki have such different personalities and shapes, but they're both adorable.

We had brunch there so there were lots of meats! I had two different kinds of bacon, sausage, and lil smokies! I also had some eggs. I stayed mostly on plan except for a mimosa a tiny forkful of tres leches cake.

I wasn't ready to go home after my sister's so I stopped at the And That store and Walmart, two stores that were surprisingly open today. I got some cute coral and another grassy plant for the window.

I've just switched to the Keto diet, but I'm already down a half pound. I'm finding it super easy to stick with at the moment. I'm currently weighing in at 197.

My OOTDs are the worst. Jeans and plaids, jeans and tees. I'm feeling pretty good about myself at the moment so that's a bonus!

I went on a cooking frenzy today, making food for during the week. For dinners, I'm having chicken thighs with broccoli. I'm used to eating boneless, skinless chicken breasts so thighs were a change for me! I actually prefer them! I tossed the chicken and broccoli with olive oil and Montreal Chicken Seasoning with a squirt of garlic paste and baked at 425 degrees for about a half hour.

This made a super tasty dinner with a side of avocado. I'll probably add a bit more garlic next time, but it was my first time trying the kind that squeezes out of a tube so I was cautious!

I also grilled up some burgers on my George Foreman grill. I'm making cheeseburger salad for during the week. It's basically a burger with mayo and pickles and cheese over salad. It looks super yummy so I'll let you know how it turns out.

I've got an idea for what to do with my kitchen to spruce it up a bit. I'm going for pastels - think candy-inspired! I bought these mint chairs that match my Keurig. I'll probably pick up some pink accessories and/or paint the kitchen walls pink. The cabinets really need to be replaced, but I don't see that happening anytime soon so this is the best I can do at the moment! At least it will be cute!

Holidays have been sort of weird since my mom died. She always celebrated EVERY holiday to the fullest, but today was a great day. My dad and sisters are creating new traditions and I think that's helping us not be so sad that she's not there to celebrate with us.

I hope you all had a happy Easter if you celebrate it!
